    In Edith's Kitchen Cookbook Review: Vibrant, Family-Friendly Recipes

    I was sent Edith Galvez's debut cookbook, In Edith's Kitchen, last Summer and immediately knew I wanted to cook from it using ingredients from my own garden. I started simply by making her beans and rice with fresh poblano peppers I had grown. The recipes were easy to follow, clearly written, and incredibly flavorful.

    After gaining confidence with those first dishes, I began diving deeper into the book. With each recipe, I understood more clearly why Edith has built such a strong and loyal community online. Her love for Mexican food and family-centered cooking shines through every page.

    On social media, Edith shares her busy life as a mother of two girls while cooking vibrant, comforting meals rooted in her heritage. That warmth and authenticity carry beautifully into this cookbook. Check out her Instagram @edithxbellaa.

    Inside In Edith's Kitchen

    There is an impressive variety of recipes throughout the book. You will find breakfast favorites, weeknight dinners, snacks, desserts, and drinks. There is also a helpful basics section that includes homemade tortillas and a wide range of salsas.

    The photography is bold and vibrant, showcasing more than 90 heartfelt recipes that reflect Edith's Mexican-American upbringing and the influence of her abuela and mother. The book feels both approachable and celebratory, making it accessible to home cooks at many skill levels.

    Favorite Recipes So Far

    • Tacos de Papa – Smooth mashed potatoes mixed with salsa and mozzarella, tucked into a tortilla and fried until crisp.
    • Frijoles de Edith – Hearty, deeply flavorful beans that I tested both in the slow cooker and the Instant Pot. I skipped the soaking stage each time, and they turned out so good.
    • Lemon Blueberry Loaf Cake – A simple, tender cake bursting with blueberries and finished with a bright lemon glaze. Try it alongside my Winter Detox Smoothie.
    • Beef Stew in Spicy Tomatillo Sauce – A rich, stew-like soup packed with flavor that only gets better the next day.

    When I say I have truly cooked from this book, I mean it! I also made Tacos de Carmarones and Slow Cooker Carnitas. The Recipes alone prove how versatile and reliable the collection is. I cannot wait to try Migas, Banana Pancakes, Enchiladas Rojas, and so many more.
